A Bit About Me

I love pretty much any recipe out there involving lentils and I love trying new foods from other cultures. Outside of the cooking world, some other fun facts are that I have a knack for beating my husband at Rummikub, (don't tell him I said that), and I’m the proud mom of a sweet little girl named Eden, who has Down syndrome. For ten years, I lived abroad—mostly in Togo, West Africa—where I have so many sweet memories and dear friends. Lots of adventures were had in those years. I’m now in a new season of life where I’m incredibly grateful to get to be a wife and a stay-at-home mom, and we live in Alabama.

Why I Started This Blog

Let’s be real: we all need to eat, and we all love good food. But as a new mom, I’ve found that spending hours in the kitchen just isn’t realistic. At the same time, I would like our family to be eating clean, nourishing foods without breaking the bank—a real challenge in today’s world of skyrocketing grocery prices. I love discovering and sharing recipes that are cheap, easy, and healthy.

When I hear friends say they don’t like to cook, don’t feel confident in the kitchen, or end up spending too much money on takeout, it stirs some level of passion in me. I wouldn't consider myself to be any kind of a pro-chef, but I do love sharing my own meal creations, discoveries, and enjoyment of cooking and helping others to feel confident and equipped to create simple, delicious meals that make them shine like rockstars in the kitchen- especially other tired and busy moms of little ones. I will always share some pictures of the meals I make, and steps to get there, but honestly, I on purpose don't want the photos to look Pinterest perfect. I want the photos to be raw, real glimpses of delicious food that isn't intimidating and makes you feel like you could easily jump into making it too.

Another thing to be real about is that in this juncture of life, I need an outlet and hobby for my brain cells to flourish, besides reading up on all the latest trends for being a mom of a 9 month old. Ha, ha.

This blog is more than just doable meal ideas for tired and busy people. It’s also a space for me to share my raw, honest thoughts about the twists and turns of life. Writing has always been life-giving for me, and I hope the things I share will be relatable, nourishing food for thought.

I love reflecting on the goodness of God, even in life’s hardest moments, and sharing about how I'm experiencing Jesus' care for me. Enjoy simple, affordable, healthy meals alongside me as I'm finding and learning them.
