This has been a go-to snack for me this week. It's just SO simple, and SO good. You can mix it up in about 2 minutes, and then it's done. Here's what you need to make about 4 servings:
- 1/2 cup of oat flour
- 2 tablespoons of almond butter (or peanut butter if you prefer)
- 2 tablespoons of maple syrup
- give or take about a few spoonfuls of chocolate chips, however many you think you want. You can use DF chocolate chips if you need to.
Mix together the first three ingredients until it's the right doughy consistency. Fold in the chocolate chips. Enjoy!
Alternate idea- leave out the chocolate chips and press the "cookie dough" into a small pan. Melt the chocolate chips along with a little bit of almond butter for 30 seconds in the microwave. Stir and then spread on top of the cookie dough. Chill in the freezer for a bit and cut into bars. If you use peanut butter instead of almond butter, it's kind of like a Resees.
